Carrot Mint Salad

2 tablespoons apple cider vinegar
1 tablespoon olive oil
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
6 medium carrots, thinly sliced
1/4 cup chopped fresh Mint

In a large bowl, whisk together the vinegar, olive oil, salt and pepper until they’re combined. Add the carrots to the vinaigrette and toss to combine. Add the mint leaves and toss. Add more salt and pepper to taste
